Ingredients

  • 2 cups diced fresh pineapple
  • 1 large cucumber, seeded and cut into halfmoon shapes
  • 1/2 cup red onion, thinly sliced
  • 1/4 cup cilantro, chopped

Dressing:

  • 2 tablespoons lime juice
  • 2 tablespoons olive oil
  • 1 teaspoon honey
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

Instructions

  1. Whisk together the dressing ingredients, you can use small bowl for this job
  2. Then combine the pineapple, cucumber, red onion, and cilantro, please use the big bowl for this
  3. Pour the dressing over the salad and toss to coat.
  4. Serve immediately or chill in the refrigerator for later.

Notes

- You can add some strawberry fruit for adding sweeter in salad, add just about 1/4 cup of chopped strawberries.

- For more spicier, i recommend you to add a pinch of red pepper flakes to the dressing.

- You can store the salad's leave-over in the refrigerator for up to 2 days. or freeze it in freezer for increasing its shelf life.
